BEFORE THE ROAST: UNDERDSTANDING GREEN COFFEE BEANS

You've dialed in your grinder, calibrated your scales, maybe even adjusted your water for hardness. At some point in this hobby, you start optimising everything - except the one variable that arguably matters more than the rest combined: the green coffee bean, before anyone's touched it with heat.

WHAT ARE GREEN COFFEE BEANS?

Green beans are coffee beans in their raw, unroasted state. They come out of the coffee cherry, get processed (washed, dried, sometimes fermented depending on the method), and then... that's it. No heat, no roast, no colour changes yet. They're a pale, slightly grassy-green colour - hence the name - and they smell more like hay or fresh vegetables than anything you'd associate with coffee.

This is the form coffee travels in from farm to importer to roaster. It's also, notably, the form that's genuinely stable. Green beans can be stored for a year or more without much loss of quality, kept cool and dry. Once they're roasted, that clock starts ticking fast - most roasted coffee is at its best within two to four weeks, and it's downhill from there.

Almost everything you associate with "coffee flavour" - the aroma, the acidity, the sweetness, the bitterness - is revealed during roasting. When you roast at home, you're in control of freshness, roast level, and ultimately, flavour.

When you're sourcing green coffee beans, you'll see reference to the origin, the altitude it was grown at, and the processing processing method. These are all important variables to understand when sourcing your green beans.

WHERE DO GREEN BEANS COME FROM

Green beans are graded and sold based on origin, variety, altitude, and processing method - all of which shape the raw material you're working with before a single bit of heat is applied. A washed Ethiopian Yirgacheffe and a natural-processed Brazilian will behave differently in the roaster and taste different in the cup, long before you factor in your roast profile. Buying green gives you access to this variety directly, rather than whatever blend or single-origin your local roaster happened to put on the shelf.

WHAT IS PROCESSING?

Before a green bean is a green bean, it's a seed sitting inside a coffee cherry. Processing is how that seed gets separated from the fruit and skin around it, along with whatever fermentation happens along the way. It's easy to overlook, since it all happens at origin rather than at your roaster, but it shapes flavour just as much as most people assume the roast alone does.

There are three main processing methods: natural, washed, and honey. Beyond those three, the industry's seeing more variation all the time - anaerobic versions of the originals, experimental methods like carbonic maceration, and regional variants worth knowing, among others.

Natural processing leaves the fruit intact on the bean while it dries. It's generally the method that brings out the fruitiest, sweetest flavours, since the bean spends its drying time absorbing sugars from the fruit still surrounding it.

Washed processing goes the other way - the fruit and skin come off the bean before fermentation even starts. With none of the fruit's influence to filter through, it's easier to taste the effects of varietal, origin, weather, and fermentation directly, which tends to give washed coffees more clarity in the cup and a clearer read on where they're actually from.

Honey processing sits somewhere between the two. The skin comes off, but a varying amount of fruit pulp is left on the bean through drying. How much determines the grade - white, yellow, golden, red, or black, running from least fruit left on to most. The more that's left, the closer it leans toward a natural's fruit-forward character, though generally not quite as far.

WHY DOES ALTITUDE MATTER?

Altitude is another variable worth paying attention to - it gives you a reasonable read on what to expect from a coffee before it's anywhere near a roaster. Worth saying upfront, though: there are excellent coffees grown right across the altitude range, so this isn't a shortcut for judging quality, more a set of general tendencies.

Coffee plants grown at higher altitudes take longer to mature than those grown lower down. Cooler temperatures and thinner oxygen at altitude slow the development of the cherry, and that extended growing period gives the plant more time to build complex sugars - which tends to show up as more nuanced, desirable flavour in the cup. It also makes the bean denser, which has a direct effect on how it needs to be roasted.

Higher-grown coffees also tend to carry more acidity than their lower-altitude counterparts, along with less caffeine - generally meaning less bitterness and more room for sweetness to come through.

FROM GREEN TO ROASTED

When green beans hit heat, a lot happens in a short window. Moisture evaporates. The bean expands and its structure changes. Sugars and amino acids undergo the Maillard reaction and caramelisation, which is where flavour and aroma compounds are built. Colour shifts from green to yellow to brown. Along the way there's an audible marker called "first crack," where internal pressure releases and the bean's cellular structure opens up.
